Lost Skillet Alert: Reward if Found

Howdy everyone! Did you make it through your Monday?!

Luckily, my job is flexible enough that traveling 4 hours (to and back) + the humidity/heat + the copious amounts of food, beer & wine via yesterday's in-law family reunion left my sleep patterns crazily out of whack, so today I kept low key... which in reality means my to-do list is continuously getting longer, WHOOPS!

First things first...

I'm attempting to solve the where the heck is our largest sauté skillet with a bright orange handle?!?!

We got Rachel Ray's Cookware Set as a wedding gift and have mysteriously misplaced/lost/SOMETHING our larger skillet... I'm tellin' ya, nowhere to be found!.... and it has a bright orange handle for goodness sake! How hard could that be to find?... Apparently, very difficult. 

I remembered it was "missing" or perhaps just misplaced several days prior, but after needing it to effectively make a dish for our family get together, I have been on a mission.... which has led to no success :(

PS: My husband is the most decisive person ever, while I on the other hand, can't choose anything to save my life! When my mother-in-law asked us to bring a side, while I immediately began ruminating ideas all through my brain of yummy, time effective & travel-friendly things to make, then Alex exclaims, LET'S MAKE FALAFEL! With little time to prep, I said alright and I started those babies up!

Falafel Balls with Katie's Lemon-Cucumber Greek Sauce
Serves ~ 10-12 large balls
Slightly adapted from Budget Bytes

In the line up folks (for the Falafel balls):
- 2 (15-ounce) cans garbanzo beans/chickpeas
- 1/2 red onion, largely sliced
- 4-5 teaspoons minced garlic
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1 teaspoon dried cumin
- Handful, ~ 1 Tablespoon fresh cilantro
- Handful, ~ 1 Tablespoon fresh parsley 
- 1 teaspoon baking powder
- 1/2 cup flour



Coach's Orders:

1. Drain and rinse garbanzo beans/chickpeas, then add to a food processor or blender

2. To the processor, add sliced red onions, garlic, cilantro, cumin, parsley, salt and cayenne pepper



3. Pulse several time and scrape down the edges as you go to make sure you get everything incorporates.  No worries if you still have some smaller chunks of things after blending for 1-2 minutes.  The mixture will be pretty sticky at this point (see below). 




4. Transfer the bean and spice mixture to a bowl and stir in the baking powder.  





5. After, slowly incorporate 1/2 cup flour (about 1-2 Tablespoons a a time) into the mixture until it becomes dough like where you can mold it to your likin'




                                                                             


                                                      

6. Cover and refrigerate to let all of the flavors combine.  I made this in the evening and let cool and mix together overnight. 

Fast forward to the next day...





 7. I used an ice cream scoop that I soaked in warm water for a little beforehand so that the mixture doesn't stick to the scoop and here we go folks!


8. Roll in your :clean: hands into a ball form and set aside until you're ready to cook the batch!

9. Heat ~ 4 Tablespoons oil into a skillet (insert where I remember we were "missing" the skillet I needed!) over medium/high heat to lightly fry the falafel balls for 4-5 minutes to let brown on all sides...  
Traditionally, falafel is only fried, but this is my healthier version!


10. My balls turned more into patties, and after just lightly giving them a roll in enough oil to just coat the bottom of the pan, I popped them on a non-stick sprayed baking dish and let cook more and brown deeper at 425 on the middle rack for about 10 minutes.

 Since I was serving then as a side dish or appetizer to bring to the family get together, I thought toothpicks would be good if we chose to serve them before the main meal so people could pick one up, dip in the sauce we'll cover in a sec' and gobble down, but they're very versatile as an appetizer, a tasty side dish or our personal favorite, in pita pockets for falafel "gyros" style :) NOM! 

..... and here we go me-friends!

Browned enough to have a great crunch on the outside, but still moist and soft on the inside and not too dry.  I had several requests for the recipe and were gone before I had my go at trying one, but it's been something I've made many a times and can attest to the deliciousness of this flava'... especially when you let all the flavors marinate together overnight!




While falafel is great on its own, when served alone, a dip is a great addition! Hence....

Lemon-Cucumber Greek Sauce

Many know this is as tzatkiki sauce that is traditionally served in Greek dishes like falafel, but I like my take because it's simple, fresh, summery and stuff we always have on hand.

If you're a die-hard tzatkiki lover, this supplement probably won't be to your likin'...

In the line up folks:
- 1/2 cup reduced fat sour cream
- 1-2 Tablespoon seeded and diced cucumber
- 1-2 teaspoons lemon juice
- 2-3 teaspoons minced garlic
- 1 teaspoon fresh cilantro, chopped
- Salt and pepper

Coach's Orders:

1. Seed cucumber by slicing in half and taking a teaspoon and sliding it down to remove the seeds into the sink or garbage (to the left) until they look like mini-boats (to the right)


2. Chopped up cucumbers (see left side picture) and try to keep a little of juice from the sides of the cucumber or from when you were seeding it to add with the lemon juice for extra cucumber flavor.  

3.  Add 1/3 cup reduced fat sour cream to a bowl (see right side picture), add the lemon juice and any remnants of cucumber juice and you will see it will become a silk-like texture when you stir it in.  




4. Add minced garlic, chopped cucumber, chopped cilantro and salt and pepper and stir to combine all together.  


5. Cover and let the flavors combine and marinate overnight in the fridge.  Serve cold alongside the falafel. 




DE-LISH!

The cilantro adds great flavor, the lemon juice adds a perfect tang, the cucumber sliced have the much-needed crunch and the garlic is just enough to taste, but nothing overwhelming.  So cool, refreshing, light and a great addition to however you choose to serve your falafel!

.... Perhaps it'll keep my mind off the mysteriously missing skillet?....

Lemon-Garlic Roasted Red Potatoes

Wow did the weekend FLY by?!... Way, way too quick!

This post probably should have been titled, "The weekend that flew by with a side of Lemon-Garlic Roasted Potatoes" it was felt so jammed packed!

Hope you had some time to relax and unwind :)

Friday night, as I said before, I took my mid-term at the very last minute circa 10pm (naturally) and headed to bed to start off our non-stop weekend o' fun :)

Saturday, we caught up with friends to try a local brewery, Triton Brewery for some good beer and even better company! (Try it out local folks!) Conversations ranged from beer to restaurants to religion to college experiences to dorm living to sex changes.... No, that wasn't a typo... You can't ever quite control where conversations go after catching up after it's been far too long.. and I love that! It was quite a time before we let the dreaded rain pass (PS: Just hours earlier, there was 0% chance of rain, and next thing ya' know, I'm tasting a beer with a side of lightning strikes outside the window!) before we got in our cars and headed back to their house for chow time!

Oh Indiana weather, you do love to play with our minds, don't cha?!... Admit it now!

We headed back to their idyllic house.  I want it!!! Perfect size, amazing deck and backyard, great furniture & decor, and of course... 2 very cute kitties! Chef J. fired up the grill while Jessica, Alex and I stayed busy continuing our chats of various topics (obviously!) and trying to help watching them in the kitchen making veggie kabobs and prep the corn (I hate when you realize you have been bad guests by not offering to help until it hits you really fast... and it's too late... Good guests: 1, Katie and Alex: 0). Once the food was ready and the table was set, scarf-down-time commenced that my belly didn't leave time for a picture... Sorry my friends, but gosh was this was the most delish meal + my addition of lemony, garlic roasted potatoes to add to the spread was just a great spread. I SO should have gotten a picture of their perfectly ripe & full sized zucchini from their garden that was part of our kabobs, though!!!

.... And now introducing our small contribution to the cookout.....

Lemon-Garlic Roasted Red Potatoes
Serves 4-5
Slightly adapted from Kayotic Kitchen

In the line up my friends:

 - 2 pounds red potatoes, skin on, largely diced and soaked for 15-20 minutes
- 1 large lemon, for lemon juice + lemon juice
- 4 Tablespoons extra virgin olive oil
- 1/2 teaspoon salt
- 1 teaspoon dried oregano
- 1/3 cup vegetable vegetable stock/broth
           - 3-4 teaspoons minced garlic
       - Dashes of cracked pepper
      - 1/4 cup Parmesan cheese

 Coach's Orders:
                                                                                           
1. Diced potatoes into small/medium chunk and soak diced potatoes in water for 15-20 minutes so remove extra starch so potatoes can get golden brown and the skin has all the nutrients! I definitely suggest red potatoes for regular Idaho potatoes because they're healthier (in my :humble: opinion)...


2. Remove the potato from the water and pat dry as much as possible.  

3. Transfer potatoes to a large roasting pan of your likin', but as thin of a layer of potatoes as you can get. 

4. In a separate small/medium sized bowl, add all extra virgin olive oil, oregano,  minced garlic, lemon zest, lemon juice and vegetable stock and stir together and then pour over the potatoes and mix together with you :clean: hands to really get each potato coated!



  




4. Cook on bottom shelf of oven at 400 degrees for 30 minutes to cook through.  Give a good stir, add some dashes of paprika and the Parmesan cheese and up the heat to 425 degrees and cook another 25-30 minutes on the middle/top shelf to get crispy and golden brown and pipin' hot! :)

This was bubblin' hot as we were runnin' out the door so bear with my picture please!


Crispy-lemony-garlic perfection!

.....I went a little lemon crazy on this baby, so I suggest only using 1 large lemon as the instructions say above (I used 2).. but hey, if ya' can't get enough of that lemony goodness, go right ahead and use 2 :)

A great crunch, lots of lemon flavor to ring in the summer season and super flavorful for a summer side dish for a weekend, weeknight or pot-luck meal! 

PS: I meant to add some fresh parsley at the last 5 minutes for a nice crunch and some color, but ran out of time, so just a suggestion!

Sunday we spent the day visiting my in-laws at their cabin in Madison, IN and much of our extended family surrounded by good company, plenty of laughs (and wine/beer), good food and LOTS OF DOGS! for a summer get-together :)

Not gonna lie though, that's old picture of their ravine since it was piled high full of algae this visit :(



Rarely do I say "Thank You" to rain, but when it was stickily-humid for a couple hours straight + a huge firin' blazin to grill for 13 people, some light/medium rain was exactly what we needed to cool things down and enjoy my in-laws wonderful wrap around, covered porch and good food! Plus, once it stopped or drowned to a small drizzle, we got to let the dogs romp around by taking a wisp around their huge property, while Poncho (the nose whisperer) sniffed everything along the way and Piper was... well... being Piper. Her odd, weird, happy self :) My in-laws cabin and property is basically our dog's personal slice of heaven, especially when we go down their to visit and romp around in the river and throughout the woods so they can explore and then sleep like babies on the 2-ish hour drive home! SCORE... 

Call me crazy, but dogs have strong similarities to children because the whole drive there, they're fighting to perch up to see where we're heading, breathing extra excitedly and then hop up if we hit a stop sign thinking we're there... Sorry doggies, 40 more miles to go... and then on the ride home, they're worn out from the events of the day that they get curled up & go fast asleep that we sometimes forget they're there.... Not really, but kinda ;) Ya' know what I mean?!

Happy Friday + Friday Favorites + A Special Announcement

Happy Friday & First Day of Summer!
... although I think the weather got the memo a bit early this year as it's been blazin' hot!

Any special or fun things planned for the weekend?

While this week has brought out my very most procrastination abilities with school (I'm on module 3.5 of 6 and my midterm is due this evening... Whoops!), but I can finally see the light after Forbes rated a Master's in Public Health as the 6th best graduate degree to get right now... HALLELUJAH!

Anyhow, this weekend we are planning on catching up with some old friends at a local brewery we haven't tried before and gathering with my in-laws and some extended family down at their cabin in Madison, IN so it should be pretty busy (and extremely hot!... nothing under 89 degrees in our forecast!) around our parts, but first things first, must.get.midterm.done!

Now for some highlights of the week...


MY SISTER IS ENGAGED!!!!!! 

I am BEYOND excited and happy for them and love that I'm getting another brother-in-law, Tom <3<3<3




















On top of this GREAT news, my sister other sister is back from Africa (lived there for the past 6 years) so naturally, I am getting so unbelievably excited for my sister and brother-in-law's 3 1/2 year wedding anniversary + Welcome Home from the Peace Corps (they've been in Moldova) celebration/extravaganza come August 23 :) First time all 5 of my siblings have been altogether in 4 years and the very first time all 7 of us (2 new brother's: my brother-in-law Conrad + my Alex) have ever all been together! SO UNBELIEVABLY EXCITED!


 Love and hugs to mi familia! 






While I wished a Happy Father's Day to all the father's of my life, we also celebrated Alex's Father's Day as papa bear to our furry kiddos :) Happy furry Father's Day Alex!
















Nothing helps cheer up a week like meeting up with old and dear friends for dinner and drinks. Thanks for making my week Jessica!

Favorite Bake: Apple Banana Bread.  I need to make this, ASAP, like I'm talking yesterday-kind-of-ASAP. Looks so delish! Hope I can fit some baking time in this weekend (especially since we have some bananas startin' to get mushy!)


Favorite Garden Project: Coolest Bird Feeder Ever. I so need to figure out how to make a DIY version of this bad boy! Seriously, how cool and cute is this darn thing?!


Favorite Place: Mineral Baths in Tuscany, Italy. Can I please get on a plane/jet/helicopter/time-portal and be dropped off here, like right now? So serene, so calm, so blue.... AHHH!


Favorite Food: Roasted Garlic "Chicken". An avid fan of Iowa Girl Eats, all of her recipes always look so delicious that I start making a grocery list the size of Mount Everest thinking I'll actually have enough time and stomach space to inhale all her recipes.  PLUS, 90% of them are easily made veggie style with a few of my secret touches.  This will definitely be on our menu soon :) Looks so mouth-watering good!


Favorite Space/Decor: Turquoise Heaven Bedroom. My husband LOVES turquoise, but this isn't an "in-your-face" turquoise, but perfect accents to a clean, white, crisp looking bedroom. Love this to pieces!!... Now to get our dogs to stop sleeping in our bed so we can actually own white colored things!

Favorite Drink: Blackberry Sage Cooler.  MMMM, this looks SO refreshing.  Perfect summer drink that I can almost taste through my screen! Although sage is on the back-burner of my favorite herbs, I can totally see how it'd work with blackberries (a fave of mine) with some bubbles from the club soda and extra sweet from the sugar.  If you're kickin' back after a hard work week, add some splashes of rum and this would be a great go-to summer mock or cocktail!
