Unlike Amanda's luck, I was the num-nut who walked outta the office today.... both hands completely full.... seeing a large dark cloud thinking, it's been cloudy all week and there was no rain in the forecast today!

Oh Indiana, I'm convinced this state finds pleasure in being outrageously inconsistent with weather...

Hence, halfway between my good 10 minute walk from my office to my car (I work on a college campus, and parkin' ain't no joke!....  so naturally you result to creepily following people to their cars waiting for them to pull out to get a good parkin' spot... Yes, I'm shamefully guilty sometimes.....). 

Nonetheless, about halfway to my car and no shelter in a reasonable distance... I, of course, got caught in what turned from an I-can-tolerate-this rainfall to within seconds..... TORRENTIAL DOWNPOUR commences!

..... Did I mention I was wear all white up top?!... Not a good scenario here peeps!

So I drive home, desperately needin' a change o' clothes and grab the mail to find the usual Thursday pile-high club of coupons from every fast food and creepy restaurant within a 10-mile radius, including.....

Skyline Chili

I remember my first bite of a Skyline Chili Cheese Dog.... followed by a stomach ache.... but I'm not gonna shy away and pretend that being a 5-year vegetarian doesn't come with cravings from my meat-eating past, which is why I LOVE that I can re-create my favorite pastime foods, but healthy, stomach-ache-less, and meat-free!


In the line up!
- 1 Tablespoon olive oil
- 8 ounce Quorn Ground "Beef" Rounds
- 2 Morningstar Veggie Dogs
- 4 ounces tomato sauce
- 2-3 Tablespoons onion, finely chopped
- 1-2 Tablespoons fresh pepper, finely chopped
- 1 teaspoon garlic, minced
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1-2 teaspoons reduced sodium soy sauce
- 3 dashes of hot sauce
- 1 Tablespoon shredded sharp cheddar cheese (per dog)
- 2 whole wheat hot dog buns

Coach's Orders!

1. Heat olive oil over medium heat and add finely chopped onion and peppers for 3-4 minutes.

2. After onions become translucent, add the garlic for 1-2 minutes until cooked. 

3. Add the veggie "beef" rounds and cook for another 3-4 minutes. 

4. Season the ground "beef" rounds with the chili powder, cumin and paprika.   

5. Add the tomato sauce and stir to combine. 

6. Turn heat down to low and add hot sauce and soy sauce for extra flava'! 

7. Add veggie dogs, thawed slightly, into the sauce & cover to let dogs cook for about 7-8 minutes.

8. Once the dogs are cooked, heat up the broiler, place dogs into a wheat bun and pile on the chili and then top with the shredded cheese!

9. Broil for 2-3 minutes until cheese is oozy-gooey melted and it's.... let's all say it!


Forget Skyline Chili.... and the aforementioned post-chow stomach ache!

Oozing with cheese, flavor PACKED, grease-free, all meatless and oh-my-goodness delicious!
